A Cutlet Above
Attention to detail is the most important ingredient
I want to do something a little different today. Rather than focus on one dish or method, I’m going to dig in to all three components of this meal. On their own, each one is a keeper: simple to make, and deeply good to eat. I could absolutely make a post about each one, and if I was savvier I probably would. But I value continuity over quantity, and since each component of this delightful plate of food meshes together so beautifully it’s worth exploring how small details make simple food shine, and how they reinforce each other in combination.
Those components are a breaded cutlet, a three-ingredient sheet pan roast, and a sexy sauce. They’re all easy and familiar, and thus bound to please a range of eaters, but each one has an element that sets it apart from the everyday—even though this is absolutely an everyday dinner in terms of the effort required. And of course you can make these parts separately, and mix and match them with whatever you like. I’m confident that one or more will enter your regular rotation. This is an absolute home run.
