I made this today and it ruled! Good thing I had some house sourdo on hand. The greens out of the pan were on the verge of unpalatably bitter, though some sort of freaking magic happens when it hits the toast. I've been horta-curious and now the floodgates have opened!
I'm so glad! In future, a little bit of acidity (vinegar or lemon) will also reduce bitterness. It's not part of the traditional version so I left it out.

Appreciate the potential for redirection of my passive-aggressive relationship with the dandelions in my yard. And the Brautigan shout-out
There are a shocking number of good edibles in an (unsprayed) yard. Ground ivy (which I bet you have) makes a good mojito, too!
I'd hit that. Good thing I know what a Maillard reaction is!
If it were a duck sandwich, it would have been a mallard reaction.
And if you beat that duck thin and flat, it would be a paiilard reaction.
But since it’s just dandelions it’s merely a MyYard reaction. I can’t believe I’m only thinking of this now. Thank you!
Peter, I am very glad you're here.
